The estate, located in the commune of Alignan du Vent near Pézenas, covers twenty-two hectares of vines planted with syrah, caladoc, vermentino, cinsault, alicante and muscat petits grains in semi-slopes for an annual production of 1200 hl.
It is classified as a "wildlife refuge" thanks to the abandonment of chemical insecticides for more than fifteen years, and to the marriage of demanding technical rigor and innovative avant-garde ethics.
After harvesting, the grapes are destemmed before vatting to avoid any risk of unpleasant herbaceous taste.
The red wines are made using the traditional method of alcoholic fermentation
The white and rosé wines are obtained by bleeding, i.e. without pressing, the juice extracted from the fruit being recovered as soon as the vatting process is completed to be vinified at low temperature.
